Stuffed Mushrooms

Ingredients

  • 24 large fresh mushrooms
  • 1/4 cup sliced green onions
  • 1 garlic clove, minced
  • 1/4 cup butter
  • 2/3 cup fine dry bread crumbs
  • 1/2 cup shredded Cheddar or smoked Gouda

Directions

  1. eheat oven to 425. Rinse and drain the mushrooms. Remove stems; set caps aside. Chop enough of the stems to measure 1 cup.

  2. In a medium saucepan, cook the chopped stems, green onions, and garlic in butter until tender. Stir in bread crumbs and cheese. Spoon crumb mixture into mushrooms caps.

  3. Arrange stuffed mushrooms in a 15×10×1-inch baking pan. Bake for 8-10 minutes or until heated through

  4. Prosciutto-Stuffed Mushrooms: Prepare as directed, except omit cheese. Stir 1/3 cup chopped prosciutto, 1/4 cup shredded Provolone, and 1/2 tsp dried Italian seasoning, crushed, into the crumb mixture.
