Apricot Souffle

Ingredients

  • 1 1 lb. 14 oz. can apricot halves
  • 1 3 oz. pkg. lemon-flavor gelatin
  • 1 3 oz. pkg. orange-flavor gelatin
  • 3/4 cup cold water
  • 2/3 cup Miracle Whip Salad Dressing
  • 1/3 cup ginger ale
  • 1 8 oz. pkg. cream cheese
  • 2 egg whites
  • 1/4 cup sugar

Directions

  1. Drain apricots reserving syrup, chop 1 1/2 cups apricots.

  2. Dissolve gelatin in boiling syrup and enough water to make 2 cups; add cold water.

  3. Gradually add Miracle Whip and ginger ale to softened cream cheese, mix well. Stir in gelatin; chill until slightly thickened.

  4. Beat egg whites until frothy. Gradually add sugar, beating until stiff peaks form. Fold chopped apricots, egg whites into gelatin mixture. Pour into glass dessert dishes. Chill until firm. Garnish.
