Pickled Red Onions

Ingredients

  • 1 large red onion, thinly sliced
  • 3 cups distilled white vinegar
  • 1 tbsp. + 1 tsp kosher salt
  • 1 tbsp. + 1 tsp sugar
  • 2 bay leaves
  • 1 tsp black peppercorns

Directions

  1. Place onion in a medium glass bowl; set aside.

  2. In a medium saucepan, bring vinegar, salt, sugar, bay leaves, and peppercorns to a boil over medium-high heat. Pour boiling vinegar mixture over onion. Let stand at room temp until cool, about 1 hour. Refrigerate in an airtight container for up to 5 days.
