French Onion and Beef Soup

Ingredients

  • 3 tbsp. butter
  • 1 medium onion, thinly sliced and separated in rings
  • 2- 10.5 oz. cans condensed French onion soup
  • 2 1/2 cups water
  • 2 cups cubed cooked beef
  • 4 1-inch slices French bread
  • 1/2 cup shredded Gruyere cheese

Directions

  1. Preheat broiler. In a large skillet melt butter over medium heat. Add onion; cook about 5 minutes or until tender. Stir in soup, the water, and the beef. Bring to boiling, stirring occasionally.

  2. Meanwhile, place the bread slices on a baking sheet. Broil 4 inches from the heat about 1 minute or until toasted on one side. Top the toasted sides of bread slices with shredded cheese; broil about 1 minute more or until cheese is melted.

  3. To serve, ladle soup into soup bowls. Top with bread slices, cheese sides up.
