Chicken Tortilla Soup

Ingredients

  • 2- 14.5 oz. cans chicken broth with roasted garlic
  • 14.5 oz. can Mexican-style stewed tomatoes, undrained
  • 2 cups chopped cooked chicken
  • 2 cups frozen sweet pepper and onion stir-fry vegetables
  • Tortilla chips
  • Sliced fresh jalapeno pepper
  • Lime wedges

Directions

  1. In a large saucepan, combine chicken broth, undrained tomatoes, chicken, and frozen vegetables. Bring to boiling; reduce heat. Cover and simmer for 5 minutes.

  2. To serve, ladle soup into warm soup bowls. Serve with tortilla chips. Top with sliced jalapenos and serve with lime wedges.
