Beef and Blue Cheese Wraps

Ingredients

  • 3 tbsp. mayo or salad dressing
  • 1 tsp dried thyme, crushed
  • 2 tbsp. yellow mustard
  • 4 flour tortillas
  • 12 oz. thinly sliced deli roast beef
  • 12 oz. jar roasted red sweet peppers, drained
  • 1/3 cup crumbled blue cheese
  • 4 cups mixed salad greens
  • Olive oil
  • Additional crumbled blue cheese

Directions

  1. In a small bowl, combine mayo and thyme; remove and set aside 1 tbsp. Stir mustard into the remaining mayo mixture.

  2. Spread one side of each tortilla with mayo-mustard mixture. Evenly divide roast beef, roasted peppers, and the 1/3 cup blue cheese among tortillas. Roll up; brush with reserved mayo-thyme mixture.

  3. In an extra-large skillet, cook tortilla wraps over medium heat about 2 minutes per side or until lightly browned. Cut each wrap in half. Divide greens among 4 plates. Drizzle greens with olive oil and sprinkle with additional blue cheese; top with halved wraps.
