Arroz con Puerco (Rice with Pork)

Ingredients

  • 1 Tbsp. vegetable oil
  • 2 lbs. boneless pork loin, cut into 1-inch cubes
  • 1 Tbsp. annatto oil
  • 2 Tbsp. finely chopped garlic
  • 4 cups water
  • 2 cups rice
  • 1 1/2 cups fresh green peas

Directions

  1. Heat oil in a large skillet and saute pork until lightly browned. Add annatto oil and gently stir pork. Add the garlic and saute for 2 minutes.

  2. Add enough water to cover and simmer, covered over low heart until the pork is tender, about 1 1/2 hours.

  3. Drain liquid from casserole and measure. Add enough water to make 4 cups. Return liquid to the skillet, stir in rice and peas. Bring to a boil. Reduce heart, cover, and simmer 20 minutes or until rice and peas are tender and all liquid is absorbed.
