Ramen Noodles with Vegetables

Ingredients

  • 3 oz. package ramen noodles (any flavor)
  • 1 tbsp. vegetable oil
  • 6 oz. fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup shredded carrot
  • 1/4 cup light teriyaki sauce

Directions

  1. Cook noodles as directed (discard seasoning packet). Drain noodles and keep warm.

  2. Meanwhile, in a large skillet, heat oil over medium-high heat. Add asparagus and carrot. Cook and stir for 3-5 minutes or until asparagus is crisp-tender. Stir in teriyaki sauce and noodles; toss to coat.
