Bow Tie Pasta with Fresh Mozzarella

Ingredients

  • 16 oz. package dried bow tie pasta
  • 3 tbsp. olive oil
  • 4 large plum tomatoes, seeded and chopped
  • 15 oz. can cannellini beans, rinsed and drained
  • 8 oz. fresh mozzarella cheese, cubed
  • 1/4 cup finely shredded Parmesan
  • 1/4 cup snipped fresh basil
  • 2 garlic cloves, minced
  • 1/4 tsp salt

Directions

  1. In a Dutch oven, cook pasta as directed; drain and return to pan. Add olive oil and toss with pasta to coat. Add tomatoes, beans, mozzarella, Parmesan, basil, garlic, and salt; toss gently to coat.
