Linguini with Tomato Sauce and Basil Garlic Toast

Ingredients

  • 10 oz. dried linguini
  • 3 tbsp. olive oil
  • 6 garlic cloves, minced
  • 2 English muffins, split
  • 2/3 cup basil, chopped
  • 2 cups grape tomatoes, halved
  • 1/2 cup chicken broth or pasta water
  • 1 tsp sugar
  • Salt and black pepper
  • Grated Parmesan
  • Fresh basil

Directions

  1. Preheat broiler. Cook pasta as directed.

  2. Meanwhile, in a small bowl, combine 1 tbsp. of the oil and 2 cloves of the garlic; brush on cut sides of English muffins. Place on baking sheet. Broil 3-4 inches from heat for 2-3 minutes or until edges begin to brown and tops are golden. Sprinkle with 1 tbsp. of the basil; set aside.

  3. Meanwhile, in a large saucepan, heat remaining 2 tbsp. oil over medium-high heat; adding remaining 4 garlic cloves, the remaining basil, and the tomatoes. Cook about 2 minutes or until garlic is tender. Add chicken broth and sugar. Cook for 3-4 minutes or until tomatoes have softened. Season with salt and pepper. Add drained pasta; heat through.

  4. Serve pasta with toasted muffins. Sprinkle Parmesan and additional basil.
