Farro with Kale

Ingredients

  • 1 cup farro
  • 2 tbsp. olive oil
  • 1 small bunch Tuscan kale, chopped
  • Pinch of salt and red pepper flakes
  • 1 tbsp. olive oil
  • 1/4 cup grated Parmesan

Directions

  1. Cook farro as directed. Heat olive oil in a medium saucepan over medium-high heat. Add kale, salt and red pepper flakes. Cook, stirring, until the kale wilts, about 3 minutes. Stir in the farro and 1 tbsp. olive oil, the Parmesan; season with salt. Drizzle with more olive oil and top with more Parmesan.
