Italian Mozzarella Salad

Ingredients

  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 1/2 tsp snipped fresh basil
  • 1 tsp Dijon
  • 1/4 tsp crushed red pepper
  • 1 garlic clove, minced
  • 15 oz. can black beans, rinsed and drained
  • 15 oz. can butter beans, rinsed and drained
  • 1 small cucumber, quartered lengthwise and sliced
  • 8 oz. round fresh mozzarella, thinly sliced
  • 2 red and/or yellow tomatoes, thinly sliced
  • 1/2 cup thinly sliced green onions
  • Fresh basil sprigs

Directions

  1. For dressing, in a mason jar, combine vinegar, olive oil, snipped basil, Dijon, crushed red pepper, and garlic. Cover and shake well.

  2. In a large bowl, combine beans, cucumber, and the dressing; toss to mix. Divide among 4 plates. Arrange cheese and tomato slices alternately on bean mixture. Sprinkle with green onions and garnish with basil sprigs.
