Broccoli Rabe Crostini

Ingredients

  • 4 oz. pancetta, diced
  • 1 tbsp. olive oil
  • 4 garlic cloves, sliced
  • 1 large bunch broccoli rabe
  • Salt
  • Red pepper flakes
  • Ciabatta, sliced and grilled
  • Grated ricotta salata

Directions

  1. Cook pancetta in olive oil in a skillet until crisp; drain on paper towels. Add garlic to the drippings; cook 1 minute.

  2. Trim, chop and rinse broccoli; leave damp. Add to the skillet and season with salt and pepper flakes. Cover and cook until tender, 8 minutes.

  3. Stir in the pancetta. Serve on ciabatta; top with ricotta.
