Strawberry Shortcake biscuits

Spongecake sucks. You want these instead. Trust me. Use fresh baking powder or the biscuits don’t rise right. What does “fresh” mean? I don’t know.

Prep time: 30 minutes
Cook time: 14 minutes
Serves 6 people

Ingredients

  • 2 cups (260g) white all-purpose flour
  • 3 tsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • ground nutmeg
  • 1/2 cup (1 stick) butter
  • 2/3 cup milk

Directions

  1. preheat oven to 425 degrees

  2. mix dry ingredients

  3. cut butter into dry mix

  4. knead until mixture resembles a course cornmeal

  5. add milk all at once

  6. mix until all the dough balls up together – hand mixing is best

  7. knead only a few times – just enough to make the dough ball smooth. The biscuits change dramatically depending on how much you knead.

  8. roll out on floured surface to 1 inch thick

  9. cut into large squares with a knife

  10. bake on greased cookie sheet for 14 minutes or until tops are golden
