Rumballs

Ingredients

  • 2 cups nilla wafercrumbs(slightly less than one box) (crush with blender or rolling pin)
  • 1 cup finely chopped pecan meats
  • 1 cup confectioners sugar
  • 2 tbsp cocoa
  • 2 tbsp (1/8 cup) white corn syrup
  • 1/3 cup rum (may want to increase this to 1/2 cup) (pale yellow bacardi)

Directions

  1. mix together, ends up very sticky because of extra rum

  2. use teaspoon to scoop enough, roll into ball, then roll in powdered sugar. Coat very well, because the rum soaks through.

  3. store airtight for >= 1week to age

  4. don’t stack more than 4 rows deep
