Asian-Style Crispy Pork Cutlets

Ingredients

  • 2 (3 to4 oz.) boneless center-cut loin pork chops (1/4 inch thick)
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1 cup panko or other dry coarse bread crumbs
  • 3 Tbsp. vegetable oil
  • 1/4 cup thinly sliced green onions

Directions

  1. With flat side of meat mallet or heavy skillet, pound pork chops between 2 pieces of plastic wrap to 1/8 inch thickness. Sprinkle with salt and pepper.

  2. Lightly beat egg in shallow bowl. Place flour on large plate. Place panko on another large plate. coat pork in flour, shaking off excess; dip in egg. roll in panko, pressing on crumbs to adhere.

  3. Heat oil in heavy large skillet over medium-high heat until hot. Cook pork 6 to 8 minutes or until golden brown and crispy, turning once.

  4. Place on paper towel-lined plate to drain; slice into thin strips. Sprinkle with green onions.
