Asparagus Casserole

Ingredients

  • 1 (10 oz.) pkg. Frozen asparagus (or 1 lb. can)
  • 3 Tbsp. flour
  • 2 Tbsp. margarine
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 cups milk
  • 4 to 6 hard boiled eggs chopped

Directions

  1. Cook asparagus as directed on package until barely tender; drain.

  2. Melt margarine in small saucepan, stir in flour, salt and pepper, blending until smooth. Add milk and cook over medium heat, stirring constantly, until thickened and bubbly.

  3. Turn half of the drained asparagus into a 1 quart casserole. Top with half of the hard cooked eggs. Pour 1/2 of the sauce over the eggs. Repeat with remaining asparagus, eggs and white sauce.

  4. bake at 325 degrees for 20 to 30 minutes or until hot and bubbly.
