Asparagus Gratin

Ingredients

  • Vegetable oil OR butter
  • 2 slices bacon, cut into small pieces
  • 1 bunch asparagus, trimmed
  • 1 1/2 cups grated gruyere cheese
  • 1/4 cup freshly grated parmesan cheese
  • 2 Tbsp, minced flat-leaf parsley
  • 1/2 cup bread crumbs
  • salt and ground black pepper

Directions

  1. Heat oven to 400 degrees. Lightly coat a gratin dish or shallow baking dish with vegetable oil or butter.

  2. In a large skillet, cook bacon over medium heat until crisp. using a slotted spoon, transfer bacon pieces to paper towels to drain. Add asparagus to skillet and cook, stirring frequently, 5 minutes or to desired doneness.

  3. Transfer asparagus to prepared gratin dish. Sprinkle bacon over asparagus and top with grated cheeses and parsley. Sprinkle with bread crumbs and season with salt and pepper. Drizzle with oil or dot with butter and bake until topping is golden brown and cheese is bubbly.
