Asparagus a La Greenbriar

Ingredients

  • 1 lb. fresh asparagus spears
  • 1 Tbsp butter or margarine
  • 1 Tbsp. flour
  • 2 tsp. chicken bouillon
  • 1 tsp. dry mustard
  • 1`/4 cup dry white wine
  • 3/4 cup half-and-half
  • 4 baked croissants
  • 8 oz. thinly sliced turkey

Directions

  1. Snap off tough ends of asparagus ; arrange spears in 10 × 6-inch dish; add butter; cover with plastic wrap. Microwave for 5 to 6 minutes. Drain liquid into 2 cup glass measure; set asparagus aside.

  2. Blend the flour into liquid in measure; stir in bouillon, mustard and wine until smooth.

  3. Microwave on high, uncovered for 1 to 1 1/2 minutes; stir once. Stir in half-and-half. Microwave on high, uncovered for 1 to 1 1/2 minutes.

  4. Slice the croissant in half; place turkey and asparagus on ottom half, then sauce; add top.
