Asparagus Loaf

Ingredients

  • 2 pkg. (10 oz. each) frozen asparagus cuts
  • 1/4 cup butter or margarine
  • 1 cup coarsely crumbled salted crackers
  • 2 eggs, slightly beaten
  • 2 cups hot milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. grated onion

Directions

  1. Preheat oven to 350 degrees.

  2. Cook asparagus according to package directions. Drain.

  3. melt butter or margarine in a skillet. Add cracker crumbs. Cook until golden brown.

  4. Combine remaining ingredients. Mix well. Add asparagus and crumbs. Mix until well blended.

  5. Line and grease a 9 × 5 × 3-inch loaf pan with a strip of aluminum foil. Grease again. Spoon mixture into pan. Bake for 30 minutes, or until knife inserted in center comes out clean.
