Asparagus Noodles

Serves 4 people

Ingredients

  • 3 Tbsp. butter or margarine, divided
  • about 1 Tbsp. olive oil
  • 1 medium clove garlic
  • 1/4 lb. mushrooms, sliced
  • 1 lb. asparagus, trimmed and cut diagonally in 1/2-inch slices
  • 1/2 tsp. salt
  • 1/2 cup grated Parmesan cheese
  • 1 Tbsp. sherry
  • 8 oz. spinach noodles, cooked and drained

Directions

  1. In large skillet or wok heat 1 Tbsp. each butter and oil, then brown garlic; discard. Add mushrooms and stir-fry until tender. With slotted spoon, remove and set aside.

  2. Add asparagus to pan, and stir-fry until just crisp-tender, 3 to 5 minutes, adding more oil if needed.

  3. Add mushrooms, remaining 2 Tbsp. butter, the salt, cheese, sherry and noodles. Toss lightly to combine over medium heart just until hot.
