Asparagus in Shallot-Mustard Sauce

Ingredients

  • 1 1/2 lbs. asparagus
  • 2 1/2 Tbsp. butter
  • 2 Tbsp. chopped shallots
  • 1/2 cup chicken stock
  • 2 Tbsp. mustard
  • salt and pepper

Directions

  1. Cook asparagus in boiling water for about 5 to 7 minutes or until tender. Drain and set aside.

  2. Heat butter in medium saucepan and saute shallots until wilted. Add remaining ingredients and simmer for 5 minutes. Add asparagus and cook until heated through.
