Asparagus Appetizers

Ingredients

  • 12 oz. fresh asparagus spears
  • 1 Tbsp. water
  • 6 oz. cream cheese
  • 2 oz. blue cheese
  • 1 tsp. lemon juice
  • Assorted crackers

Directions

  1. Snap off tough ends of asparagus and discard. Cut each spear into 1-inch pieces; combine asparagus and water in 2 cup glass measure; cover with plastic wrap; microwave 4 to 5 minutes; drain.

  2. Save 1/3 cup of asparagus pieces and set aside. combine remaining ingredients in food processor; process until smooth.

  3. To serve, spread cheese mixture on crackers; garnish with asparagus piece.
