Asparagus and French-Fried Onion Casserole

Ingredients

  • 2 cans cut-up asparagus
  • 1 can cream of mushroom soup
  • 1 (4 oz.) can mushrooms, stems and pieces
  • 2 hard-cooked eggs, chopped, optional
  • 1 small can fried onion rings, divided use

Directions

  1. Drain one can of the asparagus and set aside; drain and reserve liquid form remaining can, set asparagus aside.

  2. Mix reserved liquid with mushroom soup, undrained mushroom pieces and the hard-
  3. cooked eggs, if using.

  4. Add about 1/2 can of the fried onion rings and mix well. Gently stir in both cans of drained asparagus.

  5. Pour mixture into casserole dish and cover with foil. Bake in a 350 degree oven about 1 hour. Remove foil and add remaining fried onion rings around edge of casserole. Return to oven and heat until onion rings are slightly brown.
