Asparagus in Tarragon Butter with Herbed Vinegar

Ingredients

  • 1 bunch fresh asparagus, tough ends snapped off
  • 1 cup butter
  • 1 Tbsp. chopped fresh tarragon
  • 3 Tbsp. Herbed Vinegar:
  • 1 cup white wine or apple cider vinegar
  • 1/2 cup chopped fresh herbs such as tarragon, basil rosemary and thyme
  • Dash hot sauce such as Tabasco

Directions

  1. Steam or roast asparagus until crisp-tender.

  2. Meanwhile, in a small saucepan, cook the butter with the tarragon leaves over medium-low heat until the butter turns golden brown. Remove from heat, stir in herbed vinegar and hot sauce. Drizzle over asparagus and serve immediately.

  4. In a small saucepan, combine the Vinegar and herbs and cook 5 minutes. Strain, discarding solids. Use immediately. Store leftover sauce in small glass jar in the refrigerator.
