Double Chocolate Banana Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 1/3 cups mashed ripe bananas (about 3)
  • 1/3 cup canola oil
  • 1 large egg
  • 6 oz. mini semisweet chocolate chips

Directions

  1. Preheat oven to 350. Whisk together first 6 ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips.

  2. Fill greased or paper-lined muffin cups three-forths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing pan to a wire rack. Serve warm.
