Penny’s Peanut Brittle

Ingredients

  • 3 c. sugar
  • 2 c. light corn syrup
  • 1 c. water
  • 1 lb. uncooked shelled peanuts
  • 2 T. butter
  • 1/2 t. salt
  • 1 1/2 t. vanilla
  • 1 T. soda

Directions

  1. Combine sugar, syrup and water in large heavy pan.

  2. Place over high heat and cook until candy thermometer reaches 250º

  3. Addpanutes and cook until mixture is light brown and temperature is 300º.

  4. Remove from heat and add butter, salt and vanilla, stirring quickly and add soda last.

  5. Stir mixture well and very fast.

  6. Pur onto two greased cookie sheets – do not spread. It will spread on its own.

  7. When cold, break into bits and store in airtight container.
