Creamy Dijon Chicken

Ingredients

  • 1/2 cup half-and-half
  • 1/4 cup Dijob
  • 1 tbsp. brown sugar
  • 4 chicken breasts
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp olive oil
  • 2 tsp butter
  • 1 small onion, halved and very thinly sliced
  • Minced fresh parsley

Directions

  1. Whisk the cream, mustard and brown sugar. Pound chicken breasts with a meat mallet to even thickness; sprinkle with salt and pepper.

  2. In a large skillet, heat oil and butter over medium-high heat; brown the chicken on both sides. Reduce heat to medium. Add onion and cream mixture; bring to a boil. Reduce heat; simmer, covered, until chicken is cooked through, 10-12 minutes. Sprinkle with parsley.
