Asian Rice Pilaf

Ingredients

  • 1/2 cup sliced carrot
  • 1/2 cup sliced celery
  • 1/2 cup chopped onion
  • 3 tbsp. butter
  • 1 cup uncooked long grain rice
  • 2 cups hot water
  • 2 tbsp. soy sauce
  • 2 tsp sugar
  • 2 tsp dried parsley
  • 2 tsp chicken bouillon granules
  • 1/2 tsp ground ginger
  • 2 1/2 cups frozen peas, thawed

Directions

  1. In a saucepan, saute carrot, celery and onion in butter for 3-5 minutes. Stir in rice, water, soy sauce, sugar and seasonings. Simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Add peas; cover and heat through.
