Creamy Lemon Rice

Ingredients

  • 2 1/2 cups chicken broth
  • 2 oz. cream cheese, cubed
  • 1/2 tsp grated lemon peel
  • 1 tbsp. lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup uncooked long grain rice
  • 1/4 cup minced fresh basil

Directions

  1. In a saucepan, combine first 6 ingredients; bring to a boil. Stir with a whisk. Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
