Game-Stopped Chili

Ingredients

  • 28 oz. can diced tomatoes, undrained
  • 15 oz. can black beans, rinsed and drained
  • 15 oz. can kidney beans, rinsed and drained
  • 1 lb. boneless beef chuck steak, cut into 1-in. cubes
  • 1 lb. bulk spicy pork sausage, cooked and drained
  • 2 medium onions, chopped
  • 1 medium red sweet pepper, chopped
  • 1 medium green pepper, chopped
  • 1 cup hot chunky salsa
  • 1/3 cup medium pearl barley
  • 2 tbsp. chili powder
  • 2 tsp. jarred roasted minced garlic
  • 1 tsp salt
  • 1 tsp ground cumin
  • 4 cups beef stock
  • 2 cups shredded Mexican cheese blend
  • Corn chips

Directions

  1. Place all of the ingredients except the cheese and chips in a slow cooker. Cook, covered, on LOW until beef is tender, 6-8 hours.

  2. Stir in cheese. Serve with chips.
