Auvergne- Style Potatoes (Pommes de Terre a L’Auvergnate)

Ingredients

  • 3 or 4 Tbsp. butter, cut into small pieces
  • 2 1/4 lb. potatoes, peeled
  • 1 clove garlic, minced
  • Salt and ground black pepper
  • 6 slices bacon
  • Generous 1/3 cup chicken, beef or vegetable stock

Directions

  1. Heat oven to 350 degrees. Grease a flame-proof baking dish or deep oven-safe skillet with a bit of the butter.

  2. Rinse potatoes under cold running water and cut into very thin slices. Arrange a single layer of sliced potatoes in the bottom of the prepared baking dish. Sprinkle with a bit of the minced garlic, season to taste with salt and pepper and top with a few pieces of butter.

  3. Repeat layers until all of the potatoes have been used. Lay bacon over top and pour stock over bacon.

  4. Bring to a boil over medium-high heat, then transfer baking dish to oven and bake 1 hour, or until potatoes are tender.
