Austrian Nut Fruit Cake

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp. baking powder
  • 1 lb. pecans, toasted and chopped
  • 1 lb. candies red cherries, halved (can use a mix of red and green)
  • 1 lb. seeded dates
  • 1/2 lb. candies pineapple chunks
  • 4 eggs
  • 1 tsp. vanilla extract

Directions

  1. Heat oven to 250 degrees.

  2. In a small bowl, sift together the flour, sugar and baking powder.

  3. In a separate bowl, mix together the pecans and fruits. Sift flour mixture over fruit mixture.

  4. In a third bowl, beat eggs with an electric mixer until fluffy. Add vanilla to eggs and pour over fruit mixture. Mixture will be very thick and lumpy.

  5. Line two (8 1//2 × 4 1/2 inch) loaf pans with foil. Pour batter into prepared pans and press down well.

  6. Bake at 250 degrees for 2 hours. Remove cakes from pans to a wire rack and cool completely before slicing. Will keep tightly wrapped in the refrigerator for several weeks.
