Aunt Dorotha Cake

Ingredients

  • 1 pkg. German Sweet Chocolate (4 oz.)
  • 1/2 cup boiling water
  • 1 cup butter or margarine
  • 2 cups sugar
  • 4 egg yolks
  • 1 tsp. vanilla
  • 2 1/2 cups sifted cake flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 cup buttermilk
  • 4 egg whites, stiffly beaten
  • Frosting:
  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 slightly beaten egg yolks
  • 1/2 cup butter or margarine
  • 1 tsp. vanilla
  • 1 1/3 cups coconut
  • 1 cup chopped pecans

Directions

  1. Melt chocolate in double boiler. Cool. Cream butter or margarine and sugar until fluffy. Add egg yolks, one at a time, beating well after each.

  2. Blend in vanilla and chocolate. Sift flour with soda and salt; add alternately with buttermilk to chocolate mixture, beating after each addition until smooth. Fold in beaten egg whites. Line the bottoms of three 8 or 9-inch layer cake pans with paper. Pour an equal amount of batter into each pan. Bake at 350 degrees for 30 to 40 minutes. Cool. Frost tops.

  3. Coconut Pecan Frosting:

  4. Combine all frosting ingredients except coconut and pecans.. cook and stir over medium heat until thickened, about 12 minutes. Add coconut and pecans. Cool until thick enough to spread; beat occasionally.
