Baby Kale Salad with Cajun Ranch Dressing

Ingredients

  • 2 tbsp. unsalted butter, melted
  • 1 tbsp. olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic salt
  • 2 cups cubed dinner rolls
  • 1/2 cup mayo
  • 2 tbsp. buttermilk
  • 2 tbsp. chopped fresh parsley
  • 1 tbsp. each chopped fresh dill and chives
  • 1 tsp distilled white vinegar
  • 1/2 tsp minced fresh garlic
  • Salt and black pepper to taste
  • 1 pkg. baby kale salad mix
  • 3/4 cup each sliced celery and red bell pepper

Directions

  1. Preheat oven to 375.

  2. Combine butter, oil, Cajun seasoning, and garlic salt; toss with cubed rolls. Spread croutons on a baking sheet; bake until golden and crisp, about 10 minutes.

  3. Whisk together mayo, buttermilk, parsley, dill, chives, vinegar and fresh garlic for the dressing; season with salt and pepper.

  4. Toss together kale, celery, and bell pepper; drizzle with dressing. Top salads with croutons.
