Cheesy Grits with Scallions

Ingredients

  • 2 cups whole milk
  • 2 cups water
  • 1 tsp kosher salt
  • 1/8 tsp cayenne
  • 1 cup yellow grits
  • 1 cup shredded sharp Cheddar
  • 2 tbsp. unsalted butter
  • 1/4 cup minced scallions

Directions

  1. Heat milk, water, salt, and cayenne in a large saucepan over medium-high to a boil.

  2. Stir in grits in a steady stream. Reduce heat to medium-low and cook grits, stirring constantly, until thickened, 5-6 minutes.

  3. Stir in Cheddar and butter until melted, then stir in scallions.
