Avener’s Wasabi Mashed Potatoes

Ingredients

  • 2 garlic cloves
  • Neutral oil such as canola or grapeseed (optional)
  • 4 russet potatoes, peeled and cut into larger cubes
  • 1/2 cup cream, warmed
  • 4 Tbsp. butter
  • Salt and pepper to taste
  • 2 Tbsp. wasabi powder (dehydrated horseradish, see note)

Directions

  1. Heat oven to 400 degrees. Place garlic cloves inside a piece of foil; drizzle with a little oil, if desired. Seal foil and roast garlic in oven for 15 minutes. Remove and discard peels.

  2. Meanwhile, cover potatoes with water. Bring to boil and cook until tender. Drain; puree in food processor with garlic, cream, butter, salt, pepper and wasabi powder, and process until smooth.

  3. Note: Wasabi powder is available in Asian markets and some natural foods stores.
