Avocado- Shrimp Mousse

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 3 medium avocados, mashed
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. dried oregano
  • 1/2 tsp. ground red pepper
  • 1/2 tsp. dried cumin
  • 2 cups sour cream OR plain yogurt
  • 1/4 cup fresh cilantro leaves
  • 8 oz. cooked shrimp, peeled and deveined
  • 1 cup black olives, pitted and chopped
  • crackers OR tortilla chips

Directions

  1. Grease a fluted 10-inch quiche pan or a 9-inch glass pie pan.

  2. In a small saucepan, sprinkle the gelatin over cold water. Let stand 5 minutes to soften. Cook over medium heat just until water is boiling and gelatin has dissolved.

  3. In a food processor, combine avocados, lemon juice, herbs and spices, sour cream, cilantro, and gelatin. Process until smooth. Pour the mixture into the prepared pan. Cover with plastic wrap and refrigerate until firm, about 6 hours.

  4. To unmold, run tip of sharp knife around edges of pan and invert onto flat platter. Arrange shrimp and black olives in concentric circles on top. Serve with crackers or tortilla chips.
