Baby Carrots Vinaigrette

Ingredients

  • 1 pkg. (10 oz.) frozen whole baby carrots, cooked and drained
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup minced parsley
  • 5 onion slices

Directions

  1. Combine all ingredients in a bowl. Toss lightly to mix. Let stand a few hours, or overnight. Just before serving, remove onion slices if desired.
