Winter quinoa salad

Ingredients

  • 1 cup cooked quinoa
  • 2 cups shredded kale
  • 2 cups shredded carrots
  • 1 chopped pear
  • ⅓ c feta cheese
  • ⅓ c chopped almonds
  • ⅓ c raisins
  • ⅓ c olive oil
  • 1/4 c apple cider vinegar
  • 1 T Dijon mustard
  • 1/2 minced shallot
  • 1/4 t salt
  • 1/4 t black pepper

Directions

  1. Transfer 1 cup cooked quinoa to large bowl to cool. Add 2 cups each shredded kale and carrots, 1 chopped pear, ⅓ cup each feta, chopped almonds, and raisins.

  2. To make the apple cider dressing, in a jar shake together ⅓ cup olive oil, ¼ cup apple cider vinegar, 1 Tbsp. Dijon mustard, ½ minced shallot, ¼ tsp. each salt and black pepper. Toss with salad and serve. Makes 6 servings.
