Bacon, Chicken and Arugula Sandwiches

Ingredients

  • 6 boneless, skinless chicken breast halves
  • Olive oil
  • 18 bacon slices
  • 6 hamburger buns
  • 1 1/2 cups arugula leaves
  • Dressing:
  • 6 Tbsp. mayonnaise
  • 4 tsp. Dijon-style mustard
  • 1/2 cup chopped arugula leaves

Directions

  1. Mix dressing ingredients together and season with salt and pepper to taste.

  2. Preheat barbecue to medium-high. Rub chicken breasts with oil. Salt and pepper to taste. Grill 6 minutes per side or until tender and no longer pink (170 degrees). Set aside.

  3. Cook bacon until crisp. Toast buns.

  4. To make sandwiches, spread dressing onto each bun. Lay 1 chicken breast on each bun half, top with bacon slices and arugula. Top with remaining bum half.
