Bacon and Egg Salad Open-Face Sandwiches

Ingredients

  • 1/3 cup mayonnaise
  • 1 Tbsp. Tabasco Green Pepper sauce
  • 5 hard-cooked eggs, finely chopped
  • 2 Tbsp. bacon bits
  • 2 tbsp. finely chopped green onion
  • 1/8 tsp. fresh ground black pepper
  • 4 slices crusty sourdough bread, toasted
  • 6 asparagus spears blanched and cut in half lengthwise

Directions

  1. In a medium bowl, combine mayonnaise, and Tabasco sauce. Add hard-cooked eggs, bacon bits, green onion and black pepper; stir to coat well. Chill until ready to serve.

  2. To serve, spread toasted bread slices with egg salad and garnish with asparagus spears, using three halves for each sandwich.
