Bacon ‘n’ Frank Bean Soup Stew

Ingredients

  • 1 cup dried navy or great northern beans
  • 6 cups water
  • 4 slices bacon, finely chopped
  • 1 bay leaf
  • 2 tsp. salt
  • 1 can (1 lb.) tomatoes
  • 1 cup sliced onion
  • 1 cup raw potato cubes (1 1/4 inch)
  • 1 clove garlic, minced
  • 1/2 tsp. pepper
  • 1 lb. fully-cooked frankfurters or wieners, cut crosswise into quarters
  • 1 1/2 cups zucchini squash sliced (1/2 inch)
  • 1 pkg. (9 oz.) frozen cut green beans, defrosted

Directions

  1. Combine navy or great northern beans and water in Dutch oven; bring to a boil and boil 2 minutes. Add bacon, bay lead and 1 tsp. salt. Cover and simmer 1 1/2 hours.

  2. Add tomatoes, onion, potato cubes, garlic, pepper and remaining 1 tsp. salt. Simmer 30 minutes; fold in franks, zucchini and green beans and heat about 15 minutes.

  3. If desired, prepare beans up to before adding tomatoes and other vegetables and seasoning, then cover and refrigerate until the nest day.
