Bacon Fried Rice

Ingredients

  • 3 Tbsp. vegetable oil, divided
  • 1/2 large yellow onion, thinly sliced
  • 4 green onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 Tbsp. minced ginger
  • 1 cup frozen peas
  • 4 large eggs, beaten
  • 2 cups leftover chilled brown jasmine rice
  • 6 slices bacon (about 1/2 lb.),cooked and crumbled
  • 3 Tbsp. soy sauce
  • 1/2 tsp. Sriracha, or to taste
  • 1 carrot, thinly sliced

Directions

  1. Heat 1 Tbsp. oil in a large skillet. Add onion, green onions, garlic and ginger; saute 5 minutes. Stir in peas and cook 2 minutes. Transfer mixture to a medium bowl.

  2. Add eggs to skillet, scramble 3 minutes. Stir in onion mixture and bacon. Add soy sauce and carrots and serve hot,
