Bacon-Green Onion Corn Muffins

Ingredients

  • Nonstick cooking spray
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • ground black pepper, to taste
  • 2 Tbsp. granulated sugar, or to taste
  • 2 Tbsp. finely chopped green onion
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • 5 to 6 slices bacon, cooked crisp, drained and crumbled

Directions

  1. Heat oven to 400 degrees. Coat 10 muffin cups with nonstick spray. Place muffin cups in oven.

  2. In a medium bowl, stir together cornmeal, flour, baking powder, salt, black pepper and sugar. Toss chopped green onion with a little of the cornmeal mixture. Set aside.

  3. Stir egg and milk into cornmeal mixture just until dry ingredients are moistened. Fold in green onions and bacon.

  4. Remove muffin cups from oven and fill 2/3 to 3/4 full with batter. Bake 15 to 17 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
