Creamy Chicken, Brussels Sprouts & Mushrooms One Pot Pasta

Ingredients

  • 1 lb. chicken thighs
  • 4 cups sliced mushrooms
  • 2 cups sliced Brussels sprouts
  • 2 tbsp. Boursin cheese
  • 1 1/4 tsp dried thyme
  • 3/4 tsp dried rosemary
  • 2 tbsp. chives
  • 8 oz. whole-wheat pasta
  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 3/4 tsp salt

Directions

  1. Combine pasta, onion, garlic and salt in a large pot.

  2. Add chicken, cut into bite-size pieces.

  3. Add mushrooms and Brussel sprouts.

  4. Add Boursin, thyme and rosemary.

  5. Cook it up. Pour in 4 cups of water. Bring to a boil over high heat. Boil, stirring often, until the pasta is cooked and the water has almost evaporated, 10-12 minutes. Let stand for 5 minutes, stirring occasionally, before serving. Sprinkle with chives before serving.
