Trail Mix

Ingredients

  • 150g Whole Almonds
  • 100g Pecans
  • 30g Plain Oats
  • Cooking Spray
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 115g dried cranberries
  • 200g dried apricots

Directions

  1. Preheat oven to 180 degrees celsius

  2. Place nuts and oats in a bowl and spray evenly with cooking oil (lightly – a couple of short sprays is enough)

  3. Add the cinnamon and stir until well distributed

  4. Add 1 tablespoon of honey and stir to coat everything

  5. Spread nut mixture over baking tray lined with foil

  6. Bake in the oven for 15 minutes, stirring the mixture every 5 minutes

  7. Remove from oven and let cool

  8. Once cool, stir in the dried fruit, then stir in the second tablespoon of honey

  9. Divide the mixture into 50g servings
