Bacon Layer Breakfast

Ingredients

  • 8 strips bacon
  • 8 eggs
  • 1/2 cup milk
  • Salt and pepper
  • 1 Tbsp. butter or margarine
  • 1/4 cup chopped green pepper
  • 2 Tbsp. finely chopped onion
  • 4 slices frozen fresh toast
  • 4 slices (2 to 3 oz.) process American cheese
  • Paprika for garnish

Directions

  1. Cook bacon according to package directions. Cut strips into halves crosswise and keep warm.

  2. Combine eggs, milk, salt and pepper. Melt butter in skillet. saute green pepper and onion until barely tender. Add egg mixture, stir to combine and continue cooking stirring gently, until eggs are scrambles.

  3. Toast French toast. While hot, top each slice with 1 slice cheese, 4 pieces of bacon and a quarter of the scrambled egg mixture. Sprinkle lightly with paprika.
