Bacon Onion Asparagus

Serves 4 people

Ingredients

  • 1 1/2 lbs. fresh asparagus, trimmed
  • 2 Tbsp. olive oil
  • 1/4 tsp. each salt and pepper, divided
  • 6 bacon strips, diced
  • 1 medium onion, chopped
  • 2 Tbsp. cider vinegar
  • 1 tsp. sesame seeds, toasted

Directions

  1. Place asparagus in a 15x 10 × 1 inch baking pan.

  2. Drizzle with oil; sprinkle with 1/8 tsp. salt and 1/8 tsp. pepper. Bake at 400 degrees for 10 to 15 minutes or until lightly browned.

  3. Meanwhile, in a small skillet, cook the bacon over medium heat until crisp. Remove to paper towels, drain, reserving 2 tsp. drippings. Saute onion in drippings until tender. Remove from the heat; stir in the vinegar, bacon and remaining salt and pepper.

  4. Transfer asparagus to a large shallow bowl, top with warm bacon dressing and toss gently to coat. Sprinkle with sesame seeds.
