Cheddar-Walnut Bread

Ingredients

  • 1 1/2 cups self-rising flour
  • 1/4 cup whole wheat flour
  • 1 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tsp. sugar
  • 6 Tbsp. Irish Butter such as Kerrygold
  • 5 oz. sharp cheddar cheese Irish cheddar preferred
  • 1/4 cup chopped walnuts
  • 2 eggs
  • 1 cup buttermilk

Directions

  1. Heat oven to 375 degree. Lightly grease a 9-inch round cake pan (can also use a 9-inch loaf pan).

  2. In a food processor, combine the flours, mustard, salt, baking powder, baking soda and sugar. Pulse 2 to 3 times to combine. Add the butter and process for 15 seconds or until the mixture resembles coarse crumbs. Set aside 1 Tbsp. each of the cheese and walnuts. Add the remaining cheese and walnuts to the food processor and pulse 8 to 10 times or until blended. Add the eggs and buttermilk and process until soft dough forms, about 15 seconds. Spoon batter into the prepared pan. Sprinkle the reserved cheese and nuts over top.

  3. Bake 35 to 40 minutes or until a skewer inserted near the center comes out clean. Cool in pan on a wire rack.
